Onion (Pyaz) Kachori recipe -

Onion Kachori Hot Pyaaz (Onion) ki Kachori or Aloo(Potato) Pyaaz ki Kachori are sold in many snacks shops in Rajasthan. Like other kachoris, these too are served with spicy and sweet tamarind chutney. But that kachori is stuffed from inside.

Although this kachori is produced in Jodhpur, but today it is famous all over Rajasthan. If seen, these crispy fried kachoris of potatoes and onions are made in very few homes.

Most of the people make onions stuffed in kachoris but today I will make onions and potatoes and other spices by kneading them in maida which looks very tasty and tasty. So let's make Delicious Onion Shortbread.

I am not an enormous fan of kachori and that i most of the time find yourself having various sorts of deep cooked samosa. Maybe it's the stuffing of samosa makes me crave more and more. Having said that, I actually have a special place for pyaz(Onion) ki kachori, and it's mostly due to its onion based mostly stuffing. Generally, the stuffing for kachori created with moong dal(yellow lentil), peas or maybe potatoes makes it a dry snack with very little moisture. However the onion has some moisture and therefore creating it juicy at the same time flaky and crisp. Additionally to that, the chaat recipes created out of onion kachori in Rajasthan tasteful and attractive compared to others. Hence most of the time I find yourself creating this kachori well ahead before and may be served as a snack or chaat dish with Chutney and sev toppings.

Ingredients For Onion (Pyaz) kachori -

  • Maida(All-purpose flour) 1 cup
  • Onion - 2 small sized (finely chopped)
  • Boiled Potatoes - 2 small (grated)
  • Green chili - 1 finely chopped
  • Green coriander - 2 tbsp
  • Red chili powder - 1 tsp
  • Salt - 1 tsp / as per taste
  • Oil - for frying
  • Water - for kneading the dough
  • How to make Onion(Pyaz) Kachori -

  • Sieve the flour, add onion, potato, green chili, green coriander, salt, red chili powder to the sifted flour and mix.
  • Now add 1 tsp oil and mix it and knead semi soft dough by adding water as required.
  • Leave the dough covered for 3-4 minutes.
  • Now apply oil on the palm of the prepared dough and make 7 equal sized balls.
  • Heat oil in a pan on medium heat (neither too hot nor too cold)
  • Grease the rolling pin and the wheel with oil first (this will prevent the kachori from sticking to the wheel)
  • Now take a dough and roll it into a circular shape of 1/2 inch thickness.
  • Put the rolled kachori in hot oil and fry it on medium flame till it becomes crispy and golden brown from both the sides.
  • Similarly prepare all the kachoris.
  • Serve hot Kachodi immediately with curd, potato curd, green chutney etc.

Tips And Tricks -

  • Do not keep the kachodi dough pre-kneaded or else the dough will become thin and the kachodi will not be able to form properly.
  • Do not roast the kachoris in high ghee or else they will turn raw from inside and brown on top.
  • Do not add a lot of water at a time while kneading the dough, add water little by little as needed.
  • Otherwise the dough will become thin and sticky.
