Five Vegetarian Pasta and Noodle Dishes

Disclaimer: If you prefer watching or would also like the visuals click on the video above. I only have three requirements for my recipes, they are delicious, quick, and if not quick then simple enough. And in exactly that very order. So here are my simple but tasty recommendations!

Spicy Peanut Heaven


  • Soy sauce
  • Rice vinegar
  • Peanut butter (to taste)
  • Maple syrup (to taste)
  • Garlic (to taste, I have used fresh garlic, garlic powder or garlic puree. Depends on what I have on hand. )
  • Schezuan chili flakes (to taste)
  • Ginger (optional)
  • Sesame seed oil
  • Sautee veggies: Onion, bell pepper, mushrooms, corn
  • Garnish veggies: cucumber, bean sprouts, green onion, *carrots
  • Noodles of choice (I prefer udon)


  1. Sautee the veggies and garlic
  2. Add the equal measures of soy sauce and rice vinegar (1 tbsp each for one serving)
  3. Add the maple syrup, and let it mix well
  4. Add the chili flakes and ginger (I use ginger powder)
  5. Finally, add the peanut butter (the sauce will thicken at this point)
  6. Add your noodles
  7. Garnish with spring onion, cucumber, sesame seed oil, and carrots
  8. Sometimes I sautee the carrots with the other veggies or on their own to char them. Either way, it tastes good and slightly different.

Plum Sauce


  • Oil
  • Onion
  • Non-dairy milk
  • Plum Sauce
  • Tomato paste
  • Chilli Flakes
  • Garlic
  • Ginger (optional)


  1. Sautee the onion and garlic
  2. Add the tomato sauce and the dry ingredients
  3. Add the milk and plum sauce gradually to reach the desired consistency
  4. Add the noodles

*This was my first time attempting this. Next time I would most definitely add more veggies.

Tomato Sauce


  • Pasta Sauce (pre-made or make your own)
  • Oil
  • Chilli Flakes or green chilies (optional)
  • Black Pepper (optional)
  • Mozzarella or parmesan cheese (optional)
  • Veggies: Onion, bell pepper, mushrooms, olives, and spinach (optional)


  1. Sautee all the veggies
  2. Add the chili flakes and black pepper
  3. Add the tomato pasta sauce
  4. Stir and let all the flavors cook together
  5. Add your pasta of choice
  6. Add cheese on top (optional)

*I prefer using the Ragu brand pasta sauce or making my simple enough sauce with tomato puree, basil, and garlic powder.



  • Lemon juice (fresh would be better, I pre-dominantly use pre-squeezed though)
  • Non-dairy milk of choice
  • Parsley (Fresh is better, I used dried basil instead)
  • Mozzarella cheese
  • Flour (optional)
  • Lemon zest (optional)
  • Black Pepper (optional)
  • Pasta of choice


1. Bring the milk to a simmer

2. Add lemon juice moderately

3. Mix well

4. Add cheese as per taste and desired consistency

5. Add the pasta

6. Garnish with parsley and lemon zest (I garnished with lemon marmalade lol)

Note: the sauce may taste sour on its own but gets quite diluted once the pasta is added

Mac and Cheese


  • Milk of choice (I prefer oat milk for the most neutral flavor)
  • Cheddar and mozzarella cheese (substitute with vegan cheese)
  • Black pepper
  • Garlic powder
  • Bread crumbs
  • Pasta of choice (I have always prefered elbow pasta)
  • Parsley (optional)


1. Bring the milk to a simmer

2. Add the cheddar cheese

3. Mix and stir well

4. Add black pepper, garlic powder, and parsley

5. Add the pasta

6. Eat as is or put in an oven-safe dish

7. Top it off with bread crumbs or Mozzarella cheese and hot sauce (I use Old de Paso)

8. Bake for 8-12 minutes or until the cheese is a nice layer of melted heaven
