Cooking During A Global Pandemic
Pantry Friendly and Fridge Friendly Meals
As everyone knows we are currently in a global pandemic. The outbreak of Covid-19. It's recommended that we don't eat out or order food and eat at home. Well I have some recipes for you that will be pantry and refrigerator friendly.
These items are recommended to be in your fridge or pantry at all times. Carrots, onions, celery, potatoes, garlic, butter, eggs, milk or dairy free milk, salt, pepper, any spices you like, oil, olive oil (keep in a dark spot, not in sunlight), rice, breads, pasta, peanut butter, lemons, limes, oranges, and any grains you like.
* 2 Tablespoons Red Wine Vinegar or any kind you like
* 1 Teaspoon Garlic Powder
* 2 Tablespoons Olive Oil
* 1 Teaspoon Basil or Oregano, dried
* 1 14oz Can of Diced Tomatoes, well drained
* 1 15oz can Sweet Canned Corn, well drained
* 1 15oz can Black Bean, well drained
* 1 15 can Garbanzo Beans, well drained
* 1 15oz can Kidney Beans, well drained
Combine Vinegar, Garlic Powder, Dried Basil or Oregano, and Olive Oil in a large bowl. Add Tomatoes, Corn, Black Beans, Garbanzo Beans, and Kidney Beans in the large bowl and mix well. Chill for 2 hours or overnight to marinate everything.
*Please note you can use any beans you wish.
Baked Italian Chicken w/ Pasta
* 1 Pound of Chicken Breast or Thighs or Drumsticks
* 1 Tablespoons Garlic Powder
* 2 Tablespoons Dried Basil or Italian Seasoning
* 1 Teaspoon Salt
* 1/2 Teaspoon Ground Black Pepper
* 3 Tablespoons Butter
*2 Tablespoons Olive Oil
* 1 15oz Jar of Pasta Sauce
* 1/2 cup Mozzarella
* Pasta of your choice, cooked
Place the chicken you choose in a large bowl. Add Salt, Pepper, Basil or Italian Seasoning, and Garlic Powder. Mix everything together and make sure all the chicken is coated in the spices.
In a large pan add in the Olive Oil and Butter and heat up your pan. Once your pan is hot add in the chicken in a even layer. Cooked the chicken for Chicken Breast 5-7 minutes per side and Chicken Thighs or Drumsticks 7-10 minutes per side.
Once your chicken is cooked on both sides add the pasta sauce over your chicken and add the mozzarella over the top. You can put the pan in the oven at 375 Degrees for 10 minutes or simmer it on stovetop w/ a lid for 10 minutes.
Serve with pasta of your choice.
* 3 Large Russet Potatoes or whatever you like
* 1/4 Cup Olive Oil
* 1 Teaspoon Garlic Powder
* 1 Teaspoon Onion Powder
* 1/2 Teaspoon Dried Rosemary
* 1-2 Tablespoon Lemon Juice (Optional)
Preheat your oven to 375 degrees.
Cut your potatoes into wedges and rinse them till the water is clear. Dry your potatoes really well. Place them in a large bowl add in olive oil, garlic powder, onion powder, rosemary, and lemon juice. Toss everything together really well.
Place your baking tray in your oven for 5 minutes, to preheat the pan. Take your pan out and place the potatoes in a even layer and bake for about 25-30 minutes. Toss them around halfway through the cooking process. Let them cool for a few minutes before eating.
Spaghetti Cacio E Pepe
* 1 Pound Thin Spaghetti
* 6 Tablespoons Olive Oil
* 2 Clove Finely Minced Garlic
* 2 Teaspoons Fresh Ground Pepper
* 1 Cup Parmesan
* 2 Tablespoons of Butter
Cook the pasta in a large pot of salted boiling water. In a large skillet add the olive oil and garlic and heat the pan gently. Once the pasta is done add it into the pan and add the pepper, butter, parmesan, and one cup of the pasta water. Toss everything together and serve.
Slow-Cooker Parmesan Potatoes and Chicken
* 2 Pounds Bone-in, Skin-on Chicken Thighs
* 1 Teaspoon Pepper
*2 Teaspoons Salt
*3 Tablespoons Olive Oil, Divided
* 1 Pound Baby Red Potatoes, Quartered
* 5 Cloves Fresh Garlic
* 2 Tablespoons Butter
* 2 Tablespoons Fresh Thyme
* 1/4 Cup Parmesan
Preheat a large skillet. Season your chicken with the salt and pepper. Add one tablespoon of oil into the skillet. Sear the chicken for 3 minutes per side.
In a large bowl add the potatoes, garlic, thyme, parmesan, oil, and toss everything together. Put the potatoes into your slow-cooker and place the chicken in the slow-cooker to. Add the butter in and cook for 4 hours on high.
