Let's begin with the Teddy Grahams!

A kid-friendly snack time favorite! Homemade Gluten-Free Teddy Grahams that are vegan, top-8 allergy-free, even sugar-free, and whole-grain! These adorable little bears will be gobbled up by little hands (and big ones too!)

Are Teddy Grahams a snack or dessert? They're 100% a snack, a "cookie" snack, but we always run into this categorizing problem when it comes to graham crackers.

Yes, A teddy bear cookie cutter is essential! You can't have Teddy Grahams without...the teddy shape! Don't worry if you don't have a bear-shaped cookie cutter. Nobody will judge you because they'll be much too busy gobbling these little nuggets up. Any small cutter will work.

Not going to lie, it isn't that tedious of work. They're fun (and so cute!); kind of relaxing as you get in the flow of stamping the cutter, spacing them out on a Silpat, and using a toothpick to make the eyes, mouth, and belly button! You may find that you have better face-making skills than I have (I think my teddies look a wee bit scary...but still cute!)

This base recipe here is cinnamon (you can leave the cinnamon out and make them totally "base" and plain). But you can add honey, cocoa powder, mini chocolate chips, ginger, maple syrup, etc. Whatever flavor fancies your taste buds, go for it! Follow the craving and get creative with your bears!

ingredients

1 Cup Brown Rice Flour

½ Cup Teff Flour (or Buckwheat Flour)

⅓ Cup Erythritol (or granulated sweetener of choice)

½ Tsp Baking Soda

½ Tsp Baking Powder

¼ Cup Unsweetened Applesauce

3 Tsp Vegan Butter (I use Melt)

½ Tsp Vanilla Extract

½ Tsp Cinnamon*

Other Optional Flavor Variations:

1 TB Honey

1 TB Maple Syrup

¼ Cup Unsweetened Cocoa Powder (reduce brown rice flour to ¾ cup)

½ Tsp Ginger

½ Tsp Pumpkin Pie Spice

2 TB Mini Chocolate Chips

Instructions

Preheat the oven to 350°F.

In a large mixing bowl, combine all the Teddy Graham ingredients, as well as flavorings.

Mix well to combine and knead the dough into a ball with your hands.

Roll the dough out between sheets of parchment paper or two Silpats to about ¼ inch thickness.

Use the smallest teddy bear cutter and cut out as many cookies as possible (re-rolling dough when necessary).

Use a toothpick to create eyes, mouths, and a belly button (making sure not to poke a hole all the way through the cookies).

Transfer to a baking sheet and bake in the oven for about 7 minutes. Allow to cool completely.

Store in an air-tight container to keep fresh.

*You can swap out the vanilla extract and cinnamon for your favorite flavor variations.

This Apple Pie Protein Butter is so delicious! It tastes like apple pie in a spreadable, peanut-butter-like form. But totally nut-free! Also vegan, gluten-free, sugar-free, low-carb, low-fat & low-calorie - only around 66 calories per serving!

Equipment you'll need: high-speed blender or food processor

Jar or similar container

PREP TIME : 5 minutes

Ingredients

1 cup gluten-free quick oats

1 scoop vegan vanilla protein powder

1/4 cup Sugar-Free Maple Syrup

1/4 cup water

1/2 cup applesauce

1/2 tsp natural butter flavor

1/2 tsp liquid stevia extract

1 Tbsp granulated Fruit Sweetener

1 Tbsp Organic Maca Powder

1 tsp cinnamon

1/8 tsp nutmeg

1/4 tsp salt

INSTRUCTIONS

Add oats to high-speed blender, and process until flour-like consistency is reached.

Add in remaining ingredients, and process until it is smooth and creamy.

Now grab your little bears and start spreading and dipping whichever tickles your fancy! This butter is also wonderful on bread. toast, muffins, and just about anything else that you can imagine. If you're like me, you might even catch yourself eating right out of the jar! (not ashamed!)
