8 Vegan Cookie Recipes (Kid-friendly)
Here are eight vegan-friendly cookie recipes, your kids will love them too!
Introduction
Do you love cookies? Well, if you're a vegan, then unfortunately most store-bought or bakery cookies are not for you. You can't eat the delicious chocolate chip ones from Trader Joe's, which is sad for both vegans and non-vegans alike! However, it's actually easy to make your own vegan cookies at home. Here are 8 vegan cookie recipes!
1. Peanut Butter Cookies
Ingredients: 1 cup of peanut butter, 1/2 cup of maple syrup, 2 tbsp of water, 1 cup of flour (you can use whole wheat flour for variety), & baking soda
Instructions: Stir together the first 4 ingredients until evenly combined. Mix in the flour. Roll into small balls & place 2-inches apart on a baking sheet lined with parchment paper or silicone liner. Flatten slightly with fork tines to make a criss-cross pattern. Bake 10-12 minutes at 350°F (176°C).
2. Snickerdoodles
Ingredients: 1 cup of vegan butter, 1 cup of white sugar, 1 tsp of vanilla extract, 2 cups of flour (you can use whole wheat), & a pinch of salt
Instructions: Cream the first 3 ingredients together. Mix in the salt and flour. Shape into balls and roll in a mixture of cinnamon and sugar. Bake at 400°F (205°C) for 10 minutes. Note: You can make the cookies sweeter by rolling them in more sugar before baking (not vegan).
3. Oatmeal Raisin Cookies
Ingredients: 1 cup of plant-based milk, 1 tsp of vanilla extract, 1/2 cup of maple syrup or agave nectar, 3 tbsp chia seeds (optional), 2 cups of rolled oats, 3/4 cup of raisins, & 1 tsp of cinnamon
Instructions: This recipe is super easy! Just stir together everything in a bowl and let the mixture sit for at least 10 minutes to thicken. Spoon onto a baking sheet lined with parchment paper or silicone liner. Bake at 350°F (176°C) for 12-15 minutes until golden brown.
4. Vegan Shortbread Cookies
Ingredients: 1 cup of softened vegan butter or coconut oil, 1/2 cup of powdered sugar, 2 cups of flour (you can use whole wheat), & a pinch of salt
Instructions: Mix all the ingredients together until you get a doughy consistency. Shape into balls and place on a baking sheet lined with parchment paper or silicone liner. Press down the tops of the cookies with fork tines to make that iconic look. Bake 20-25 minutes at 350°F (176°C).
5. Mexican Chocolate Cookies
Ingredients: 1 cup of flour (you can use whole wheat), 1/4 cup of cocoa powder, 1/2 tsp of cinnamon, & a pinch of salt
Instructions: Stir together the first 3 ingredients until well combined. Add in the chocolate chips and mix. Scoop out about 2 tbsp at a time and place on a baking sheet lined with parchment paper or silicone liner. Bake at 350°F (176°C) for 12 minutes.
6. Vegan Sugar Cookies
Ingredients: 1 cup of softened vegan butter, 1 cup of sugar, 2 tsp vanilla extract, & 3 cups of flour (you can use whole wheat)
Instructions: Cream the first 3 ingredients together. Mix in the flour. Shape into balls and place on a baking sheet lined with parchment paper or silicone liner 2-inches apart. Bake at 350°F (176°C) for 15 minutes.
7. Double Chocolate Chip Cookies
Ingredients: 1 cup of softened vegan butter, 3/4 cup of brown sugar, & 1 tsp of vanilla extract
Instructions: Mix together the first 3 ingredients. Stir in the flour & chocolate chips. Scoop out about 2 tbsp at a time and place on a baking sheet lined with parchment paper or silicone liner. Bake 8-10 minutes at 350°F (176°C).
8. Chocolate Raspberry Cookies
Ingredients: 1 cup of softened vegan butter, 1/2 tsp of vanilla extract, 1/4 tsp salt, 2 cups of flour (you can use whole wheat), & 3 tbsp raspberry preserves
Instructions: Mix together the first 4 ingredients until well combined. Add in the flour. Stir in the preserves. Roll into balls and place on a baking sheet lined with parchment paper or silicone liner. Bake 12-15 minutes at 350°F (176°C) until golden brown.
