Brownie Cookie Cups
At my house I can most often be found in the kitchen baking. Cookies, cakes, muffins, tarts, you name it and I can be found baking it. I love every part of it from brisk pace to the creating kitchen magic, even the delicious smells fuel my passion. It is a great hobby of mine and no one can argue with the delicious results.

Miracle Whip Chocolate Cake
My favorite dessert hands down has to be chocolate cake. What's not to love? So light and moist and chocolaty. It's a bit of heaven in every bite. There's a certain chocolate cake recipe that I'm particularly a fan of that I've been eating for as long as I can remember: my grandma's chocolate cake recipe. This recipe has been around longer that I have been and I'm sure it goes back past my grandma baking it, but I do have fond memories of baking it with her as a child and that memory definitely makes the cake that much sweeter to me.

Instant Pot Spicy Rice
Last night, I was trying to come up with a great side dish to go with my meal. I wanted something delicious that would also pair nicely with a lot of different things as I like to bring leftovers to work in my lunch. I instantly thought of rice. It takes virtually no time to cook in the Instant Pot and can be made very simply so it would pair well with a number of different foods.

There's a little known fact about me: Spaghetti is my favorite meal. People are often surprised when I tell them this. After all spaghetti is so basic and simple and boring. Cue me being offended. Instant Pot Vegan Vermicelli Noodle Soup
Since the flu and colds seem to be going around my office I have had delicious soup on my mind for a long time. To me lately, soup is a very healing meal. The steamy broth and delicious ingredients in a soup almost seem to have a healing power of their own. I instantly feel better when I eat bowl of soup, especially in the cold weather of the winter season.

Egg & Hashbrown Casserole
On Sunday, there was a very intense discussion that I was having with my boyfriend: what we should make to take to work in our lunches all week. After weeks of eating the same meal for lunch every day, he was getting bored with his usual go-to choice and wanted something a bit different. We both usually like to make something big so it lasts all week and doesn’t leave us without a lunch. After much debate over the merits of a variety of foods, I had an epiphany: a casserole. Only, what kind of casserole? I didn't want to make the same old casserole. I wanted something new. Something exciting. Something that didn't take all day to make. I spent a lot of the day researching different types of casseroles. Frankly, they all looked delicious.
