Spinach Ravioli Alfredo
Most days I try not to eat carbs so when I do make pasta I like to be creative. This has become one of my favorites with spinach ravioli so I decided to be a little daring. Instead of just ravioli I made it a meal. I made it with fresh spinach sautéed in garlic and oil, added some cooked farfalle and then gave it a splash of Alfredo. Let me tell you step by step if you would like to try this. It took me 30 minutes which means you can have a delicious dinner without spending hours in the kitchen.

The "Unimportance" of Grammar
As an educator for over 20 years, the way we teach children to write has changed dramatically. Years ago, grammar was taught faithfully and students were expected to diagram sentences and know and identify the different parts of speech. Essays were written with introductions, a body of about three paragraphs, and a concluding paragraph. Students were prepared to write their research papers, and eventually their college application essays.

Read Together With Your Child
Read with your child. Your child will love it. Show your child that reading is important to you. Make sure your child sees you reading, whether it be a newspaper, magazine, novel or even a comic book it is important that your child know that you enjoy reading. Children will always copy their adult role models.

The Coliseum in Rome
During our visit to Rome, we were privileged to visit the Coliseum. Just standing inside the Coliseum gave me chills as I envisioned being in the movie Gladiator and actually experiencing the history of that era. I could picture Russell Crowe in the center fighting for his privileges and recalling how he depicted life at this time in history. As we know, Hollywood portrays Roman gladiatorial contests as brutal, unruly duels that usually ended when one of the combatants killed the other. But in reality, gladiators didn't always fight to the death.

Zoodles Instead of Pasta
Zucchini noodles, or zoodles, are the perfect solution when craving gluten free pasta. These are healthy noodles that can be combined with a variety of sauces and additions, and can add a handful of new recipes to your daily dinner ideas. Some people love zucchini and have used this vegetable to make lasagna type dishes and even pizza on zucchini, but the zoodle is the most versatile way to prepare it to ”fool” yourself that you are really eating pasta. I have used a portable spiralizer, as well as one that is like another appliance in the kitchen, to make many luscious zoodles dishes.

A Visit to Newport, Rhode Island
Rhode Island seemed to be doing very well during this pandemic. With strict rules at every establishment we were able to have a fun-filled week despite Covid. We opted to skip the beaches and pools which were more populated than our comfort level. Instead we focused on seeing Newport, a magnificent city set on the Narragansett Bay. Our hotel was right on the bay and gave us a breathtaking view of the boats and the bay from sunrise to sunset. We did not feel the excruciating heat because of the cool breezes from the water.

Stuffed Peppers
We each have certain recipes using peppers that are our favorites. Personally, I enjoy stuffed peppers and I make them in a few different ways. In all cases, the first thing you need to do is to wash peppers, cut the tops off and clean out the inside. Then, place in boiling water standing up for five minutes. Take out and let them dry. They are ready for stuffing. Here are a few different ways I make the stuffing:
